As Chef de Cuisine of The Loft, Casey Overton leads an award winning team of chefs, sommeliers, servers and fromagiers. Chef Overton is passionate about providing guests with dishes that showcase inventive seasonal ingredients prepared simply, focusing on three to four ingredients in a dish and preparing them perfectly.
The Loft, a favorite of guests and locals alike, is the resort’s comfortable all-day dining restaurant. Situated on the fourth floor, this popular Laguna Beach restaurant features stunning panoramic views – the perfect backdrop for enjoying creative American cuisine.
The Loft features light and airy décor with a six-foot wood-burning rotisserie and an interactive cheese gallery. Adjacent to the restaurant is The Loft Bistro, an intimate bar area with its own light, casual menu. Outdoor dining and private dining for up to 30 people are also available.

The Loft Cheese Gallery
The interactive cheese bar, which features over 150 cheese selections from both regional and international cheese makers, is a highlight of the dining experience at The Loft. The hotel’s team of talented fromagiers turn a cheese plate into a work of art and offer such selections as Hoja Santa, a soft goat cheese from Dallas that comes wrapped in sassafras leaves; regional favorites such as Winchester Aged Gouda from nearby Winchester County, California; and more exotic choices such as Zamarano, a rare raw milk Manchego from the sleepy town of Zamora in Spain.
Each cheese selection is carefully paired with house-made condiments such as Blackberry Port Jelly, Lavender Caramel, Avocado Honey and Nectarine and Cherry Butter, along with crisp crackers and seasonal farmer’s market fruits.
