COMPLIMENTS TO THE CHEF

Montage Kapalua Bay announces Chef de Cuisine, Robert Barrera. Spearheading a new position, Robert will oversee culinary operations including menu creation and kitchen operations for Cane & Canoe and In-Residence Dining. For over 16 years as a culinary professional, leading several in management positions, Robert has extensive experience in several notable restaurants on Maui including Pineapple Grill, Plantation House, Hula Grill, Duke’s Beach House and Merriman’s Kapalua.

His deep creative passion first piqued his epicurean interests. The simple, comforting nature of classic French cuisine discovered while working in restaurants in California turned this passion into an obsession and eventually a full-time profession.

Robert is inspired by travel experiences throughout Europe and the Yucatan, Mexico, as well as the constant study of gastronomic traditions, current trends, and experimenting with food. He lives by the mantra “A chef must think like a scientist, organize like an accountant, plate like an artist and cook like a grandma”. Robert challenges his artistic talents by creating art with pen/charcoal. In addition, Robert is a voracious reader of any and all culinary magazines and books to keep up with the latest trends and excitement that the culinary world has to offer.
